I tried mango lassi for the first time at a Northern Indian restaurant in Singapore. The yoghurt was homemade and the Asian mangoes used were sweet scented.
The lassi was rich, sweet with a tinge of sourness, it was just fabulous. A huge glass of that mango lassi cost only €1.50. Before I get to dine there again (hopefully in a month’s time), I could only replicate one in the kitchen, not as good but good enough.
- 1 ripe medium sized mango
- 3 – 4 full tbsp of natural yoghurt
- add sugar to taste, about 4 tbsp here
- cold water to preferred consistency
- 6 – 8 ice cubes
Cut up the mango into small chunks and the discard the stone. Dump everything in the blender and blend to a smooth consistency. Drink up while it’s cold! Great for another summer day.
