The coffee in this cocktail was very well balanced, good pairing with the Raspberry Chocolate Cake offered here.
Earl Grey against fizzy soda accented with citrusy notes, all the ingredients co-exist very well with each other.
I love this cake, tart raspberry not only found on the ganache atop, also in the chocolate cake batter. Crunchy feuilletine layer at the bottom was so good.

These sweet creations are brought to you by Executive Pastry Chef Ryan Witcher and his team.
Ryan Witcher grew up in the home state of Michigan, US. Prior to joining Marina Bay Sands, Witcher served as the Executive Pastry Chef at the Ritz-Carlton. As of October 2013 Washington, D.C., Executive Pastry Chef at The Four Seasons Hotel Seattle, the Ritz-Carlton Bachelor Gulch in Avon, Colorado and The Pierre Hotel in New York. Witcher was also the Assistant Pastry Chef on the opening team of the Mandarin Oriental Hotel in New York. As the Executive Pastry Chef at Marina Bay Sands, Witcher oversees the entire pastry and bakery production for the property, including the popular SweetSpot, the hotel’s espresso bar, bakery and dessert concept.

To name a few other sweet offerings, there is Pina Colada Agar with Rosemary Infused Milk Chocolate and Caramelized Pineapple. Another highlight is the Botanica, a Sicilian Pistachio Sáble baked with fresh raspberries, topped with a White Chocolate-Marigold Whipped Ganache and sprinkled with edible flower.
The dessert offerings will be refreshed every so often, I guess this is a good excuse to revisit.
There are 12 types of cheeses brought in from France, Italy, Spain and United Kingdom.
There is a bread station on the side. I find that the Chocolate brioche, baguette here are pretty worthy of calories to go with the good tasting cheeses. Available are dark rye bread, Irish soda bread and etc…
I must say this buffet is really worthwhile in terms of location, breathtaking scenery during the walk in, a very cozy interior indeed for a quiet catch up session over sweets and salty goodness.
