FUSE lounge; The Chocolate & Cheese Bar @The Club, Marina Bay Sands (SG)

The inviting, soothing and comfy lounge area.

Most probably you have passed by FUSE lounge while hanging out at MBS hotel lobby level.

Be it waiting on visitors, checking out nearby cake shop – SweetSpot, on your way to dine at Jing Shan Chinese restaurant or nearby Rice buffet restaurant.

Inside FUSE, little did I know there is such an oasis to chill out admist the buzzing human traffic outside.

In the lounge, you get to see three other different sub-set areas.

For any drink ordered, complimentary (free flow) finger food below are available between 6 – 8 pm.

Chicken Satay with Peanut Sauce

Well marinated and tasty chicken satay indeed.

Angus Beef Sliders with Cheddar Cheese

These sliders were easy to eat.

Chicken Tenders with Barbeque Sauce

The well breaded and tender chicken tenders were addictive nonetheless.

You will be happy to know Fuse’s Happy Hour Promotion available from Sunday to Thursday: 4pm to 9pm

Grey Goose Classic Martini

That was some strong stuff, if you are up for it after a hard day’s work, hit it.

Raspresso Martini – Skyy Vodka, Chambord, Harveys Bristol Cream, Espresso

The coffee in this cocktail was very well balanced, good pairing with the Raspberry Chocolate Cake offered here.

Grey Berry Bramble – French Earl Grey infused Gin, Blueberry Syrup, Fresh Lemon Juice, Soda *MUST TRY*

Earl Grey against fizzy soda accented with citrusy notes, all the ingredients co-exist very well with each other.

Chocolate Raspberry Cake – Dark chocolate sponge cake with Homemade Raspberry Jam and Raspberry-Chambord Ganache.

I love this cake, tart raspberry not only found on the ganache atop, also in the chocolate cake batter. Crunchy feuilletine layer at the bottom was so good.

The Cheese & Chocolate Bar

I am glad to know this Cheese & Chocolate Bar is open every night, offers a spread of more than
40 chocolate-themed desserts and 12 types of cheese with wine pairing options.

Breath taking sky line view from MBS roof top, so sci-fi like.

One of the stations, just look at the high quality chocolate tablets lying all around the panel tables.

Strawberry-Basil Truffle Pop is what you are seeing here in the glass bowl.

These sweet creations are brought to you by Executive Pastry Chef Ryan Witcher and his team.

One of my favourite shots of the day, also my favourite chocolate counter, soooo indulgent!

Ryan Witcher grew up in the home state of Michigan, US. Prior to joining Marina Bay Sands, Witcher served as the Executive Pastry Chef at the Ritz-Carlton. As of October 2013 Washington, D.C., Executive Pastry Chef at The Four Seasons Hotel Seattle, the Ritz-Carlton Bachelor Gulch in Avon, Colorado and The Pierre Hotel in New York. Witcher was also the Assistant Pastry Chef on the opening team of the Mandarin Oriental Hotel in New York. As the Executive Pastry Chef at Marina Bay Sands, Witcher oversees the entire pastry and bakery production for the property, including the popular SweetSpot, the hotel’s espresso bar, bakery and dessert concept.

Petit poached pears covered in chocolate.

Chocolate cheese tartlets; Chocolate souffle…

Mini donuts make a-la-minute by request, served in a paper bag, you choose whatever flavouring powder to throw into the bag to coat the freshly fried donuts.

More than 250kg of chocolate is used each week to create the desserts and pastries for the
chocolate buffet!

My chocolatey selection, and this is not done yet.

To name a few other sweet offerings, there is Pina Colada Agar with Rosemary Infused Milk Chocolate and Caramelized Pineapple.  Another highlight is the Botanica, a Sicilian Pistachio Sáble baked with fresh raspberries, topped with  a White Chocolate-Marigold Whipped Ganache and sprinkled with edible flower.

The dessert offerings will be refreshed every so often, I guess this is a good excuse to revisit.

The cheese section, this corner is dedicated to different types of blue cheeses.

There are 12 types of cheeses brought in from France, Italy, Spain and United Kingdom.

More cheeses of other kind, with honey, tart jams to accompany…

There is a bread station on the side. I find that the Chocolate brioche, baguette here are pretty worthy of calories to go with the good tasting cheeses. Available are dark rye bread, Irish soda bread and etc…

Semi-hard cheeses easy on the palette.

My cheese plate.

Final round of desserts!

I must say this buffet is really worthwhile in terms of location, breathtaking scenery during the walk in, a very cozy interior indeed for a quiet catch up session over sweets and salty goodness.

Many thanks to Philicia and the warm service staff that helped make this evening so special and indulgent.
